Raw Pumpkin Soup

Ingredients:
- 2 cups pumpkin (canned is okay)
- 2/12 cups water
- 1 chopped yellow onion
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 cup soaked almonds
- 1 Tbsp cumin
- 1/2 tsp coriander
- 2 cloves garlic
- 1 cup apple or pear juice
- 1/2 tsp dry mustard
- 1/2 cup olive oil + a little salt
Blend all ingredients until creamy consistency is achieved. Garnish with cinnamon and pumpkin seeds.
