Ingredients
- 1 lb baby carrots
- 10 medium slices of unpeeled fresh ginger
- 5 oz. orange juice
- salt and pepper
Instructions
- Combine all ingredients in a pot and bring to a low boil. Simmer until carrots become barely tender.
- Transfer to a baking pan and heat in the oven until the liquid concentrates.
This recipe makes approximately 5-6 servings.
